Fremgangsmåte<br />
Stek først melet på lav varme til det blir gyllent, ha i en halv teskje salt og bland med kjøttdeigen. Lag deretter små kjøttboller og stek disse i olivenolje. Kutt kålen i små biter stek kålen i olivenolje med sitron, gurkemeie og litt salt. Kok risen på persisk vis med urtene i vannet, reduser koketiden noe fordi kålen inneholder endel væske. Bland kjøtt, kål og ris og damp under lokk i ca 45 minutter.<br />

<p>Risen må vaskes og skylles og ligge en stund i varmt vann før tilbreding. Fyll en romslig kjele med vann og kok opp, ha i havsaltet når vannet fosskoker. Ha deretter i risen. La det fosskoke uten lokk til riskornene begynner og flyte og er blitt passe myke (ca 5 minutter). Hell risen i et dørslag og skyll i kaldt vann.  Ha litt olivenolje i bunnen av kjelen og sett på middels varme. Ha risen over og form den som en pyramide. Dekk med glasshåndkle og legg på lokket, ha et lodd på toppen. Når hele kjelen er varm skru ned på lav varme og la risen dampe i ca 45 minutter. </p>

Fremgangsmåte<br />
Stek løken i olivenolje til den blir gyllen, bruk svak varme. Ha i rosinene og la det surre på svak varme i 5 minutter. Stek rekene raskt på høy varme i ca 2-3 minutter. Hell av væsken og bland med rosinene og løken. Ha på litt safran og rør inn. Kok risen og damp på persisk vis og bland med de andre ingrediensene før risen dampes, det er viktig å sørge for at det kun er ris i bunnen. Serveres med salat.<br />

<p>Fremgangsmåte<br />
Varm vannet til ca 37 grader og smuldre gjæren i vannet. Tilsett salt, olivenolje og honning. Ha gradvis i hvetemelet, og elt det hele sammen. La deigen heve 1,5 time før du fordeler den ut i en langpanne.  Dytt oliven og soltørkede tomater i brødet. Ha på rosmarin og havsalt og endel olje oppå brødet. Stekes på 220grader i 12-15 minutter.<br />

Fremgangsmåte<br />
Surr løken og hvitløken i olivenolje. Tilsett tomatboksen, fiskebuljongen, krydderet og vannet og la småkoke i ca 10 minutter. Dette kan godt forberedes i forveien. Før servering, kok opp og la potetene og blåskjellene koke i til potene blir myke. Fiskefiletene kuttes i serveringsstykker og skal trekke med retten i ca 10 minutter før servering. Ha det hele i en bolle og sett i kjøleskapet ca 4 timer, til fromagen er stivnet.<br />

Kutt lammebogen i biter, ca 5 cm store. Kutt og vask stangsellerien i biter, ca 1 cm lange. Hakk løken stek til den blir gylden. Tilsett kjøttet og stek til kjøttet blir gyllent ha i gurkemeie. Tilsett deretter stangsellerien og finhakket mynte, stek videre til sellerien får en fin mørkegrønn farge. Ca 5 minutter på høy temperatur. Tilsett deretter vannet og la koke under lokk på lav varme til kjøttet er mørt, ca 45 minutter. Koketiden avhenger av kjøttets kvalitet. Sørg for at retten ikke koker tørr. Knus den tørkede sitronen og ha i sammen med saltet. </p>

3 purrer, bruk mest av det grønne.<br />
100g spinat<br />
3 tørkede sitroner (alternativt 3 ss sitronsaft)<br />

1 ss gurkemeie<br />
1 løk, hakket i små biter.<br />
3 glass vann</p>
<p>Kutt lammebogen i biter, ca 5 cm store. Rens og finhakk urtene. Hakk løken, og stek til den blir gylden. Tilsett kjøttet og stek til kjøttet blir gyllent ha i gurkemeie. Tilsett urtene og stek videre til urtene får en fin mørkegrønn farge, ca 5 minutter på høy temperatur. Tilsett deretter vannet og la koke under lokk på lav varme til kjøttet er mørt, ca 45 minutter, koketiden avhenger av kjøttets kvalitet. Sørg for at retten ikke koker tørr. Knus den tørkede sitronen og ha i sammen med saltet. </p>
